A Fresh Approach to Banqueting

The Fairmont brand is also unveiling a new banqueting approach where guests can mingle and interact instead of sitting at tables for a plated four-course meal. Marc Cassier, CMP, Executive Director, Conference Services and Catering says the “Millennial generation is moving towards a tapas style of dining that allows more experimenting, networking and motion. There will be more focus on interaction with our chefs who will prepare small plates right in front of you. Think smaller, healthier portions and more restaurant-style dishes than we’ve had in the past.” Another fresh take for banqueting is towards clutter-free  room setups. Envision linen-less spaces, restaurant style tables and a residential look and feel for culinary presentations – moving away from traditional banqueting equipment.
